Here are 3 very quick recipes made with really good ingredients which are perfect for Valentine’s Day or any time you want something sweet but healthy. I hope you enjoy them. Here are the recipes:
Recipe #1: Coconut butter and chocolate cups
-6 tbsp of coconut butter
-4 tbsp coconut oil
-3 tbsp cacao powder
-2 tbsp honey
-Place coconut butter in muffin cups, press it down and put them in the fridge for 15 minutes.
-Melt the coconut oil and add the cacao and the honey, mix very well.
-Take cups out of the fridge and pour the chocolate mixture over the coconut butter. Refrigerate until solid.
-2 cups of mixed berries
-2 tbsp of honey (optional)
-1 packet of unflavoured gelatine
-Cook berries in 1/2 cup of water, once they boil, let them simmer for 5 minutes.
-In the meantime, in 2/3 cup of water dissolve the gelatine.
-Take the berries off the heat, blend them, put them through a sieve and add honey. Then add the gelatine and mix very well.
-Pour into molds and refrigerate until it’s set.
Recipe #3: Cupcakes with coconut cream frosting
-1/2 cup coconut flour
-1/2 cup pf honey
-1/4 cup butter, ghee or coconut oil melted
-1/3 cup cacao powder
-1/2 tsp baking soda
-1/2 tsp salt
-1 tsp vanilla extract
-1 tsp ground cinnamon
-1 cup of chilled coconut cream
-Berries or any toppings you want
-Mix all dry ingredients, then add all the wet ingredients.
-Pour into muffin cups and bake for 20 minutes at 350 F.
-Once they are baked, let them cool.
-Whisk coconut cream until it looks like frosting, spread it on top of cupcakes and decorate them with your choice of toppings.
