At first glance these don’t really look like paleo cookies.
I mean we did roll them up in balls apart from making them flat and cookie shaped. Although, this is entirely up to you. We are calling them Lemon Melts a style of paleo cookie recipe. Did you ever think you would have heard of a healthy cookie recipe before? They taste great, especially jut after the freezer, as they become all heard on the outside, and nice and gooey in the middle. Paleo Diet Advice
1 1/2 cups (150g) Almond Flour
1 1/2 cups (128g) Shredded Coconut
1/3 cup (37g) Coconut Flour
2 pinches of salt
6 tbsps of maple syrup
2 tsps of vanilla extract
Juice and zest of one lemon
1 cup & tbsp of coconut oil
Melt your coconut oil on a low heat. It won’t take long so make sure you watch it. Put your oven on at 225ºF (110ºC). Mix all the dry ingredients together then add all the wet ingredients except the coconut oil. Mix them all together then add in the coconut oil. Mix until the oil starts to cool and the mixture becomes firmer. Roll them up and add to a baking tray, then bake in the oven for 30 minutes. Put them into a container then into the freezer for an hour. Take them out, let them defrost, roll in some coconut and enjoy!
