Good for a change

As a diabetic with diagnosed genetic fatty liver disease, I’m always looking for new foods (especially breakfast foods) to compliment my diet for variety and flavor. I was afraid to try this as most LC/LS/LF foods taste like cardboard. This wasn’t the case at all. However, I had to make significant changes to the recipe to make it work for a Diabetic with genetic fatty liver issues. I swapped the Coconut oil for Canola oil as Coconut oil is high in fats (14g saturated bad fats vs. 13g unsaturated good fats). I swapped the 1 cup honey for 1/2 cup Truvia (16g sugars & a total of 17g carbs vs, 0g sugars and 3g carbs). Because I didn’t use the coconut oil, I used 1 tsp. vanilla and 1 tsp. coconut extract for flavor. Use non-sticking cooking spray for mini loaf pan or muffin tin if you aren’t using paper liners. These came out tasting great with a nutty flavor and texture that was a little dry so make sure you’ve got coffee or water to drink with them. I’m not sure if the coconut extract changed the flavor significantly but, I wouldn’t change this recipe as flavor-wise, this worked well. I may try other flavored extracts in the Vanilla muffin mix to see if they make the mix taste better. Since there aren’t any carbs in extracts, why not change things up? I would have given this a five but knocked it down to a 4 because of dryness, having to add additional ingredients which would change the Nutritional values on the package, and PRICE. This recipe made 12 muffins and ONE mini loaf for me (Not 2 dozen or 4 mini loaves). I’ll freeze to use at will. Nice option for on-the-go once made or if you’re bored to death with eggs. For the price, I would buy these every once in a while to change things up as a treat. Pretty dang good!
