These muffins are simple to make, packed with nutrients, and also delicious! They make a great snack, dessert, or breakfast on the go (they are very dense and filling). My hubby and kids love them! A perfect treat just in time for fall.
Taste of Autumn Muffins:
Combine the following in a food processor-
-1/2 cup coconut flour
-14 dates (soaked for a few hours)
-1.5 cups cooked squash (you could also substitute pumpkin) – see my easy way to cook squash here: https://www.youtube.com/watch?v=B5KGn68YG6E
-2 Apples, no need to peel
-1 heaping TB cinnamon
-1/2 TB nutmeg, dash of cloves and allspice
-1/2 tsp each baking soda & baking powder
-3 TB melted coconut oil
-3 TB water
Blend until smooth and fill a 12 cup muffin tin. Top with chopped walnuts or pecans if you desire
Bake @ 350 degrees for approx. 30 – 40 min.
I’ve been eating these muffins as part of my 7 Day Detox in order to stay sane! They feel like a cheat even though they are good for me! They are nutrient dense but still healthy and they meet all the requirements of my detox (grain/sugar/dairy free).
