Carrot Cake: Paleo Recipe

2 large Carrots, finely Grated
1/2Cup Shredded Coconut
250Grams Almond Butter
2 eggs
3 tablespoons raw honey
2 scoops Vanilla Whey Protein Powder (or 2 tablespoons coconut flour and 1/2-1tsp Vanilla bean extract)
1 tablespoon cinnamon
1 teaspoon baking powder
pinch of salt
1/4 cup Chopped Walnuts
Preheat oven to 180 Degrees.
Grate Carrots as fine as possible. Place in large bowl Along with Shredded coconut and Chopped Walnuts.
Add almond butter and eggs and mix with a mixer.
Remove and add honey, protein powder(coconut flour and vanilla bean) baking powder, cinnamon and salt and place back on mixerl.
Grease a small loaf tin, pour mixer into the tin and place in oven. Bake for 35 minutes or until golden brown on top and crisp. Leave to cool for 30mins and ENJOY 😉
