Yummy pancakes that are also healthy – and only have 3 ingredients!
These pancakes are fast and easy to make, nutrient dense, and fun to load up with toppings! They are paleo as well as gluten / grain / sugar / dairy free! Kids especially seem to enjoy them – I love giving these to my 1 and 3 year old – they make great finger food.
They make a quick, filling breakfast or snack. All the protein and vitamins in them will keep you sustained for hours.
For squash, sweet potato, or pumpkin
-1 and 1/4 cups mashed/cooked squash, sweet potato, or pumpkin
-1/2 to 1 TB cinnamon
-Mash with a fork to combine, trying to smooth any lumps
-Fry like a regular pancake
-2 mashed bananas
-4 eggs (you can easily make a half batch by doing 1 banana + 2 eggs)
-1/2 TB cinnamon
-Mash with fork until combined and fry
You can get creative with all types of toppings – Coconut whipped cream, maple syrup, a dash of cinnamon, sliced fruit, butter, applesauce, jam, chopped nuts, peanut butter, etc.
The sweet potato pancakes are my favorite (I like them plain) and my kids love dipping the banana ones in applesauce – they eat them hot or cold. The squash and pumpkin are more of a savory pancake and are best served with a bit of butter and maple syrup in my opinion:)
