Delicious Paleo Moussaka Recipe

Here is a delicious Paleo moussaka recipe, made from ground beef, eggplant and béchamel sauce. Easy to make in advance and enough for several days. Enjoy!

Ingredients:

1 large onion chopped
4 ripe tomatoes
2 medium size eggplants
2 tbsp fresh chopped parsley
4 tbsp tomato paste
2 tbsp arrowroot
2 tbsp ground cinnamon
1 tbsp dried oregano
1 egg
1 garlic clove
3 bay leaves
1lb ground beef or lamb
2 cups of almond or coconut milk
butter, ghee or coconut oil for cooking
Salt and pepper

Instructions:
-Cut the eggplants in slices about 1cm wide, season with salt and pepper. Melt some butter, and cook the eggplant slices for a few minutes on each side until they become soft and golden brown. Remove from heat and set aside.

-In the same skillet, sauté the onion and garlic for about 3 minutes. Add meat, cinnamon, oregano, salt and pepper. Mix everything and cook for about 8-10 minutes until the meat is fully cooked.


-Add the tomatoes, they can be finely chopped or blended, also add the tomato paste. Turn off heat and set aside.

-For the béchamel sauce, take 1 cup of the milk and add the arrowroot powder, mix it very well. Heat up the other half of the milk with bay leaves and pepper, don’t let it boil. Once warm, add the dissolved arrowroot mixture, keep stirring until it reaches the desired consistency, about 2-3 minutes.

-Turn off heat, whisk the egg and add it to the sauce making sure to mix fast so the egg doesn’t scramble.

-In a greased baking dish, place the eggplant slices together, then put the meat on the top, sprinkle the chopped parsley and put the sauce on top. Cheese is optional at this stage.

-Place it in the oven for 40-45 minutes at 350F. Once ready, let it cool for 15 minutes and serve. (Tastes better the next day!).
