Caramel Apple Muffins – Paleo – Grain / Sugar / Gluten / Dairy Free!
These simple muffins are a delicious fall treat. They are loaded with nutrients and vitamins that will nourish your body and give you sustained energy. They are a perfect snack, dessert, or breakfast on the go. Both kids and adults will love these!
Caramel Apple Muffins (Makes 12)
-4 large (or 5 medium) apples cut into large sections (no need to peel)
-1/2 cup almond milk
-1/2 cup coconut flour
-14 dates (soaked for several hours beforehand & checked for pits)
-1/2 TB cinnamon
-2 TB melted coconut oil
-1/2 tsp each baking soda and baking powder
-A few drops of vanilla
Combine all ingredients in food processor until smooth and pour into muffin tin
-They are still amazing without it, but for an optional crumble topping, combine 1/2 cup almond flour with 1 TB melted butter and a drizzle of maple syrup and sprinkle over muffin batter
-Bake at 350 degree for 30 – 40 minutes
